Salt Fish Chowder

CPT.M’s Salt Fish Chowder
Ingredients:
1 lb Salt Fish – desalted and diced. (dicing it first will reduce the desalting time!)
4 – 5 Medium WHITE potatoes – peeled and medium diced
1 Tbsp Butter
1 cup chopped leeks
1 large stick of celery – chopped and finely diced
2 carrots – short peelings or thin sliced
2 Bay leaves
1 tsp summer savory
pepper to taste
¾ cup cream
Directions:
Sauté leeks, celery and carrots in butter in a large pot
Add diced potatoes to pot and put in enough water to just cover them.
Bring to a boil and then simmer until potatoes are almost cooked. (approx 25 minutes)
Add the fish and simmer for 10 minutes.
Add the cream and stir. Simmer on low for 10 – 15 minutes.
Garnish with fresh parsley or a bay leaf!
