Gourmet Fish Cakes
GOURMET FISH CAKES
(makes 4 – 4oz Fish Cakes)
Ingredients:
½ lb Captain Morrissey’s Salt Fish (Cod/Pollock/Haddock)
3 Medium Potatoes – Peeled, diced, boiled and mashed
1 Tbsp Parsley
Zest of 1 lemon
½ Large Red pepper – finely chopped
1 Tbsp chives
2 tsp Chili Powder
1 large egg
ground pepper
Directions:
*Desalt fish as directed. See HERE for instructions.
*Pouch fish for approximately 20 minutes, until it flakes easily
*Shred fish (using your hands works best) and place in a large mixing bowl.
*Add potato, parsley, lemon zest, egg, chili powder, red pepper, and ground pepper
(to taste).
*Fry in EVOO on medium – high heat, turning once to brown on both sides.
Serving suggestions: Serve with “chow chow” or “tartar sauce” and a squeeze of lemon. Try topping your fish cakes with fresh peppers, chives, diced tomatoes, and mushrooms.
