Captain Morrissey's Salt Fish Cakes RECIPE
CAPTAIN MORRISSEY FISH CAKE RECIPE
(makes 4 – 4oz fish cakes)
Ingredients:
½ lb Captain Morrissey’s Salt Fish (Cod/Pollock/Haddock)
½ lb Potatoes (2-3 medium potatoes)
½ Medium Onion – finely chopped
2 Tbsp – Parsley Flakes, ¼ cup fresh
1 egg
Cooking Oil
Directions:
*Desalt fish overnight as directed, to taste. (Provide link here)
*Poach Fish for approximately 20 minutes, until it flakes easily.
*Shred with fingers.
*Peel, cut, boil, and mash potatoes.
*Combine Fish, potatoes, Onions & Parsley. MIX
*Add 1 egg and mix with hands. If mixture is too dry, add another egg.
*Cook in oil on Med-High heat until nicely browned, flipping once.
Feeling Adventurous??? Try adding garlic, lemon zest, coriander, or fresh diced veggies!
Serving suggestions: try serving with “chow chow”, a green tomato sauce.
