Breaded Salt Fish
CPT. M’S BREADED SALT FISH
Ingredients:
2 lbs Captain Morrissey Salt Fish Fillets– Cod or Pollock
2 cups Panko breadcrumbs
2 Tbsp parsley flakes
1 tsp paprika
¼ tsp mint flakes
1 lemon (zest)
1-2 cloves of garlic
Breading:
2 Cups PANKO bread crumbs (other bread crumbs will work – Panko are crispier!)
2 Tbsp parsley flakes
1 tsp Paprika
¼ tsp mint flakes
Zest of 1 lemon
1-2 cloves of garlic – minced
Directions:
***Desalt 2 lbs Captain Morrissey’s Salt Cod/Pollock***
Marinate in 2 cups of milk and 3 Tbsp Dijon Mustard in a bowl small enough that the fish is completely covered (the longer the better).
*Mix ingredients for breading in a shallow pan
*Press fish into breading to cover completely, then flip and bread the other side
*Place fish on a pan and refrigerate for 30 minutes. This will help keep the breading on the fish.
*Pan fry in oil until nicely browned on both sides
*Serve with a lemon and “ChowChow” or Tartar
Other serving options: Cut your fish into bite size pieces and serve on a skewer with mixed veggies! Makes a great appetizer. Or try serving smaller pieces on a salad.
