Baked Salt Cod with veggies&shrimp

Christine’s Baked SALT COD with Veggie & Shrimp Medley
Ingredients:
1 lb Captain Morrissey’s Salt Cod (desalted)
½ cup spaghetti sauce
1 tsp EVOO
2 cloves garlic – minced
1 tbsp onion – minced
tomatoes, zucchini, mushrooms – sliced (not your fav? Try different veggies!)
Large shrimp – approx. 20
Fresh basil (finely chopped) & mint
¼ cup Grated cheese (extra aged cheddar)
Directions:
Desalt fish to your personal taste.
In a saucepan, fry EVOO, garlic and onions for 30 seconds
Mix in Spaghetti sauce and basil
Spread over fish
Layer sliced veggies and shrimp in an eye pleasing pattern (see photo for example)
Top with cheese, chopped basil and mint leaves
Bake at 400° for 15 minutes
Serve over rice or Spinach
